As BetterRed points out, if you move a book to a different folder all unknown file types are gone.
This means that "cover.jpeg", "cover.bmp", "cover-1.jpg" are gone. I learned this the hard way.

You can add one format of each filetype to the database; it is not limited to recognized ebook types. Using the usual add format to book (in Edit Metadata) you can add a jpg as a recognized format.
If you use jpg and jpeg, you can probably have two images, as both are valid jpg exensions. You can add a bmp, png, gif, whatever you like. Even .lnk and .url -- BetterRed knows all about this.
Using fake extensions like .jpg1 .jpg2 will also get tracked, but those extensions won't be recognized when you try to open them. You'll need to rename or associate the extension manually.
The rule is, one of each file extension per book record can be added into the database. And then calibre will track it.
