I tried again three more times beginning with a new empty book, no way. I lose the two imported files when I open again the EPUB.
I succeed only when I begin with:"Import an html file as a new book". I import directly the page_title.xhtml. When I choose the paths, I make sure my EPUB will be in the same folder than the text file. I save and then, the text and image do not go away.
