Could the AT be from the IBM PC AT, i.e. "Advanced Technology"?
In which case the final A might be Adapter?
Serial Advanced Technology Adapter.
(Although really I think I was right with Serial-ATA. No-one using SATA remembers what the ATA stands for, only that it meant a disk interface!)
