The newer Paperwhite 1 and 2 and many tablets like the iPad use capacitive touch screens. Capacitive touch screens work via capacitive coupling wherein your finger's electrical properties allow it to interact with the screen. They don't use heat sensing, they use electrons. The Kindle Touch however uses an infrared sensor to detect any object which breaks its plane.
