The Windows 8 Kindle app doesn't store its books in an accessible way - they're stored in fragments, in a database.

Install the Windows 7 "Kindle for PC" instead. It stores its books in "My Documents\My Kindle Content". You can have the Win8 and Win7 Kindle apps installed on the same PC.
