It makes sense that the photos we see don't do eink screens justice. We are looking at those phots on a computer, which means on a computer screen. We know computer screens can't display in a paper-like manner, so we shouldn't expect them to display in an eink-like manner. I think that is why the eink screens can look lcd-ish when viewed via an lcd screen.
