I'm certainly not an expert - you might like to ask your question again on the ebook formats>workshop forum. There are plenty of experts there, and most of them are helpful and friendly.
Anyway: so far as I know png files are
much bigger than the jpg version of the same image, but the png version can be manipulated more easily and does not lose quality as you fiddle with it as jpgs do.
I'm the veriest beginner with GIMP, but so far as I can tell the usual work process is to make an xcf version of the image (even bigger than png), fiddle with that until it's the size and shape and so on that you want, and then export it to jpg (small) or png (big) version.
My untutored eye can't tell whether an image on an ebook reader is png or jpg, so I routinely use jpg.
