Calibre can convert on the fly (but that can be a real transfer slowdown) when it does not have any format the device supports.
Remember. The device driver list does 2 things: 1)Sets the PREFERRED format order. 2) sets the allowed formats

I prefer the following PERSONAL Library work flow: (*optional)

Add existing book formats
Add/update/trim covers
add/update/edit Metadata
* do cleanup edits on the book, embed fonts the publisher can't ship
* convert to preferred output format
