On my device using Moon+ Reader Pro the reading app covers the entire screen (see attached). In this instance taking a standard screenshot gives you what you are looking for.

I have no experience with Evernote.

Until you find a suitable solution you could do a quick crop of the screenshot using graphic software. I still use what I believe is the last version of Paintshop Pro (v6.02) that was free, to do quick and dirty cropping and resizing.
