My understanding is that convert creates 'book jackets' - see my previous post

So, if you uncheck
Preferences->Conversion->Common Options->Structure Detection->Insert metadata as page at start of book then the artefact known elsewhere as a 'book jacket' won't be created. Its right under the check box for
Remove first image.

Anyway, they are nothing like a 'book jacket', they are more akin to a 'title page'.
