No idea what happens to collections. If I had to guess, nothing, since they are supposed to be transferrable. Did you lose collections when updating? No you just got tons of deleted ones back. It's probably the same connection.

Jailbreak is required. Fortunately, the jailbreak is very easy. The downgrade has a guide, so hopefully the technical stuff can limit itself to going at head level.

Then download the images and follow the directions here: http://ixtab.tk/kindle-touch-images/README.txt but using different .gz files. The Kindle Developers corner is a nice place to find someone to guide you through it.
