He will eat chicken and the like but is much more picky about it. He has never turned down tofu. So part of my thought is having it in the fridge so on a night that he decides he doesn't want the chicken he can have something with protein in it other then milk.

We want to continue to present the meat, I know that it can take a multitude of tries before a child eats any given food, but have some thing else ready for him. Maybe the solution is to cook some tofu with the food as we prepare it and then save it for when he decides he doesn't want the chicken/beef/pork/fish.
