The latest firmware officially released for the different models is:

Mini: 2.6.2
Touch: 3.0.1
Glo/Aura/AuraHD: 3.1.1

From others' reports, the Mini seems to work fine if 2.8.1 is sideloaded, but has some problems with later versions, in particular the cover images are too big and there are no menu options for Pocket access. Some Touches seem to work with 3.1.1 sideloaded, but others have problems, including loss of ability to connect via USB.

Generally, to install an earlier version of the firmware you will need to do a factory reset, then upgrade from the factory firmware to a later version. After the factory reset the device will automatically upgrade to the latest official version, so If the version you want to install is earlier than the latest official version then you need to connect to USB and during the upgrade process, manually replace the KoboRoot.tgz and files in the upgrade directory from the official firmware with those from the version you want to install.
