You'd want to use a Kindle desktop app, Kindle for PC or Mac, and download the books, then convert them to ePub format using Calibre. Note that if the books have DRM that would have to be removed before conversion (Apprentice Alf's blog has more info).

If you want to switch back and forth between eInk and a tablet and sync your reading position your best bet would be a basic Kindle (or a used Kindle 2, 3 or Touch).
