I make a spicy chicken pizza. I just chop the chicken into very small pieces and then cook it with a bit of oregano and tabasco. Gives the pizza a nice healthy kick. Add in some fresh tomatos, a bit of wilted spinach and not too much cheese (some mozzarella and some romano for a salty bite) and it's a winner.

I of course do like a very simple pepperoni most days.
