ENGLISH MUFFIN BREAD
3 cups whole milk
5 cups bread flour
4 1/2 tsp yeast
1 T sugar
2 tsp salt
1 tsp baking soda
Pre-Heat oven to 375F.
Combine dry ingredients, and whisk together thoroughly.
Heat milk in microwave to 120F.
Stir milk into dry ingredients, and let rise for thirty minutes.
Dust 2 loaf pans with cornmeal, and pour equal amounts of
batter into each loaf pan.
Let dough/batter rise for thirty minutes in the loaf pan.
Bake in 375F oven 30 minutes, rotating pans half way through.
Bake to an internal temp of 200F.
Let cool on rack. Slice and toast to serve.
This won't replace our usual rustic Italian whole wheat bread, but is a definite winner for something that is quick and easy when we don't have time to make that loaf. (It involves an overnight rise to develop flavour, and then three full rises before turning out and forming into a loaf. Delicious, but a lot more work and time.)
