In no particular order, and I'm cheating by including some series instead of trying to single out a book from the series:

1) Aubrey/Maturn series, Patrick O'Brian
2) The Empire Trilogy, Raymond E. Feist and Janny Wurts
3) The Lord of the Rings, J. R. R. Tolkien
