It's strange, the books look just fine on my Sony t1, but the font is just too small on my nook simple touch. The font doesn't need to be much larger, but it is just enough too small and gives me eye strain. Then the next choice up in size is huge!!

Font Scaling

It is a conversion option

Remember
Preferences: Common Options
Sets the DEFAULT for new books

If the book has been converted, THOSE settings are remembered, so you have 3 choices:
1: Use the "Restore Defaults" button at the bottom (single book mode) or Tick at the top (Bulk mode)

2)Change the setting in the Look and Fell section of the Conversion Dialog

3: do nothing, it is too scary
