The calibre editor is currently available as a beta, and usable via the command line:

It offers global undo, which will undo Replace All (something Sigil emphatically does NOT do, @Doitsu):

Kovid is also actively maintaining all parts of calibre, unlike Sigil which currently has only a project manager, but no one interested in actively developing.
