Ah, tonight my favourite turkey leftover -- Turkey Mole Poblano. Delicious. Absolutely my favourite Mexican sauce, and it's a perfect fit with turkey. Oh, and a couple of Dos Equis to go with it.
(But I confess, it's just way too much work to make from scratch, so we cheat -- we use
Rogelio Bueno. It's actually remarkably good, and really, making from scratch is an all day job with lots of helping hands. )
