I went from a 7" Playbook to an 8" full Windows 8 tablet. I have to say that the extra 1" makes a big difference to me once I made the move. I didn't mind the 7" when that was all I had, but having 8" now I would hate to go back. Like you, the 10" is just a little too big for portability to me. For my uses (mostly out and about) 8" is pretty much the sweet spot.
I can't speak to midi type apps at all, but I moved to a Win 8 tablet for better functionality in Excel. Having full windows 8 that can run virtually all windows PROGRAMS (not just apps) is a major bonus to me (full disclosure: I was never a massive app user on my Android or Apple phones). Might be worth looking at Win 8 (assuming your midi stuff plays friendly with Windows).
