A Christmas Cookie sale could be great. There are people who dread baking and might be interested in buying homemade Christmas cookies. They can be frozen. Maybe get some nice tins (or Christmasy tupperware) and parchment paper. Let people choose the cookies they want, put them in the tin with parchment paper in between, and let them freeze them.

I have a couple of cookie recipies that can be frozen as cookie balls and easily baked. Perhaps tupperware with layers of prerolled cookie dough.

Ask for volunteers to make specific recipies, send out the recipies, and sell those with the pre made, donated christmas cookies. You will need to ask people to turn in cookies with recipies so that others know what is in them for allergy purposes.

I also like the idea of a read a thon. Ask people to sponsor their reading for a month. Perhaps $.01 a page. It encourages reading and would not cost folks a ton but could raise a decent amount if enough people did it.
