Do you open the book to just the cover page, or do you move on from the cover page?
If it's the latter, try moving back to the cover page and then exit the book and see if it is still reported as being 1% read.
I cannot say all apps / devices will reset to "unread" like this, but iOS certainly seems to. I had a book that was 18% read, opened it, went back to the cover page, then checked and found it was listed as Unread.
