I ended up buying that Toshiba this morning. It comes with 8GB of RAM (2X4GB) with two empty slots, and it supports a maximum of 32GB, which is pretty much max on any laptop I've seen. And it has the i7-3630QM so the performance should be pretty good.
It doesn't have a graphics card but I don't think I'll be doing much graphics intensive gaming on it. So the built in one should be fine. And I really don't want to pour a ton of money into a gaming laptop; they seem like a bit of money pit IMHO.
It comes with a 750GB HDD, but it also has a second HDD slot, so I can add an SSD if I want to. And I might do that in a few months once the price for 120GB SSD's are down a little more.
The screen is 1080p and has good reviews, so it should be good.
And I did order a refurbished one, so it should come to about $750 once it arrives (1-2 Weeks).
