They're using the nonstandard "user-select" CSS attribute, which might behave differently on different browsers.
I suppose if this is meant to be an "anti-plagarism" feature it may still fulfill that role reasonably well, since plagarists are inherently lazy and thus less likely to jump through the hoops to work around this.
