Good morning, all! It's a beautiful day, and we're off for some kayak paddling up the Ping River today. One of these days we'll get smart and start up north at the Mekong where it feeds into the Ping and go down river... Much easier paddling...

Gotta big mug of East India Company's "Royal Breakfast" tea to wake me up, and extra to put chill and put into my thermos to bring along. Croissants, Brie, and Camembert to eat for breakfast, then it's off to the river!

I found my ideal jerky by accident. "Thick Cut" and soft makes it perfect for me. Instead of thin, rock hard stuff, cutting it 3x as thick and adding papaya or pineapple juice or meat tenderizer to the marinade to break down the fibers before drying makes a very different, softer final product, without changing any taste. This works very well with deer as there is almost no fat in venison compared with beef.
