I should think that just about any fairly current tablet will perform just fine in the scenario in which you'll use it. Speed/performance is an absolute non-issue if you're just going to read from epubs. Screen quality will be more than adequate if you pick a tablet from a known brand (as opposed to an obscure Chinese or Korean make) and storage is another non-issue if you pick a tablet with a card slot.

Personally I've often used my Galaxy tab 2 when holding talks and lectures and have found it ideal. The screen is great, despite being lower res than most new offerings and processing power is, as mentioned before, not something that even enters the equation. It's also quite robust, having survived being dropped on the floor or swiped off the table numerous times.
