No one has mentioned The Road by Cormac McCarthy? I haven't even read it, and it was the first book I thought of. I see it has cannibals in it, but I think they are more of the "real" kind, than the "zombie" kind?

I don't know if you are open to or interested in YA at all, but I really liked "Life As We Knew It" by Susan Pfeffer. Apocalypse due to an asteroid hitting the moon and changing its orbit (seems like most fictional apocalypses are due to man's actions). Starvation ensues.
