Killed your iPad? Installed with "damage"? Hyperbole, much? New versions of iOS have always required new versions of iTunes to sync.

If you don't want to upgrade, don't upgrade. As I understand it you clicked 'yes' when asked if you wanted to upgrade. There is even a Terms of Service agreement that you can read before going through the installation, which contains all the information you claim Apple hid from you. Apple didn't do anything you didn't tell it to do.
