No. The papaya is green/unripe. However, the recipe calls for a about 2 tablespoons of sugar, so the dish actually is a bit on the sweet side. Everything gets mashed up a bit in a mortar, including a small raw crab... (can be eliminated for the queasy among us) to blend the flavors. To make it in the US, you can substitute a julianned cucumber or zucchini, and it will taste almost the same.
Here is perhaps one of the better recipes for it. For the palm sugar you can substitute light brown sugar. Try to use Thai peppers though, as that is an important flavor.
Som tam is one of the two signature dishes of Thailand. The other being Pad Thai.
