Yes, you can install 2.8.1 on a Touch N905C. I've also installed the 2.8.1 firmware on 2 old Touches and it has worked without issue. One item to remember is that the Touch and Mini do not get the tiled interface that the Glo and Aura do. Otherwise, you do get the other bug fixes.
