Quick trip up to Powell River today to get a1/2 of an organic pig that will be our year's supply. And a few extra jowls to make guanciale. A tricky bit of curing but the result is special.

A glass of Three Counties Zinfandel, and I even managed to avoid my usual red wine headache.
