Bloody stupid of me I know. Just wondering if anyone can suggest how to reverse this, or indeed if I even need to, basically I just want to get to the point where I can SFTP to my kindle over wifi.

Just start over.
Use Kubrick on it, that will re-install the factory firmware + jailbreak and a few other files.
On a K4 - Kubrick takes about 10 minutes.
PS: Don't modify the contents of the Amazon file system unless you absolutely must.
Stick with the things we package here, which includes "un-install" scripts.
For instance:
Install KUAL -
Install the KUAL Firewall -
Add the new iptables rule **to the KUAL Firewall ruleset** in the appropriate chain -
Now you can switch between the Amazon ruleset and your ruleset with launcher buttons - and never have touched the Amazon system image files.
