One way may be to use one of the many "print to bitmap" virtual printer drivers. These install as a printer but print to file rather than print to a device. I don't have experience with any other than one that prints to PDF (PrimoPDF), but there are a number out there that output JPEG and other bitmap formats.
With a virtual printer you simply get the ebook into a format that works in some ebook viewing software that has a standard print function. It's then an issue of adjusting the viewer's layout to size the print "pages" as needed and then adjusting the virtual printer to produce the needed resolution.
