I'd hate to have a car where most of the buttons are touch screen based. As it is now you can be driving along and still adjust the heat, radio, rear window heater, all without taking your eyes off the road. The only time I don't mind touch screen is when the options you're selecting would necessitate looking at the screen anyway.

I have the same issue with the iphone compared to my mp3 player. I can change the volume and skip to the next track all without looking at the device, which I can't do with the iphone. Granted I don't change tracks whilst driving, already have a playlist sorted to avoid that, but when I'm listening to music in bed or out running, the device with physical buttons is much more convenient to use.
