The reason why I'm asking is that the View button doesn't work very well for me when I try to look at a cbz or cbr file. I get the following error:

evince: symbol lookup error: /usr/lib/gio/modules/libgvfsdbus.so: undefined symbol: dbus_watch_get_unix_fd

Evince opens a cbz or cbr file without a problem when you double click it.
It picks whatever is your default for that file extension. You should be able to change the default in your desktop and after a restart calibre should pick up the new default.
