It could be that this is referring to the act of aerating the wine to improve the quality of it more quickly.
You know how people refer to letting wine "breathe"? Beating the wine could be a way of hastening that process. These days you can buy devices that you attach the neck of the wine bottle so that when you pour, the device aerates the wine to speed up the "breathing" process. If you beat wine - like an egg - you are essentially aerating it.
