It's not about image dimensions, it's about image proportion. A "full size" cover in iBooks bookshelf have an aproximate proportion of 1/1.5 (width/height).

An example: following Apple guidelines, your cover image should have at least 1400 pixels along the shorter axis. So, for a cover to occupy the maximum space available in the bookshelf, the image should have, at least, 1400 x 2100 pixels (width x height).
