The problem you are going to run into is how to avoid the automatic updates when you redo the setup after any reset.

Kobo Desktop will upgrade itself to the current version when run. In turn, it will also push the current f/w to your device during the setup. You could before the device disconnects delete the upgrade files from the .kobo directory; ie manifest.md5sum, KoboRoot.tgz and the entire upgrade folder, and then replace them by the version you want to use.
