Sometimes its the metadata that I want to modify - but first I have to get what's in the database into the book's copy of the .opf file. Pressing 'C' to do an ePUB to ePUB conversion will do that and it will create a 'backup'.

However, having said that, I do sometimes save a separate copy of the format outside of Calibre before editing it.

Good idea.

As in a Make a Copy option in the context menu that creates a copy of the selected file called COPY_XXX in the book folder, where XXX is the format. The new Restore 'xxxxxxxxxxxxx' option would need to be available on these files, as would Delete — but Save to Disk, dunno ?
