You can't. A template can read only the metadata for the book being processed. User-defined categories (@categories) are not part of a book's metadata.

Again, you can't. Assuming that the template is being used in a composite custom column and thus the resulting value is part of a book's metadata, you must set up coloring rules that check the values produced by the template.
