It sounds like you are trying to edit the settings for the "Outlook Mail" account that is a direct sync to your desktop PC. That is a special "ActiveSync" account and for some reason you can't edit any of the settings, like the signature. You probably don't want to use that ActiveSync account at all. Instead, set up a NEW account on your 700w that is a *direct* exchange server sync (i.e. not through ActiveSync conduit). Then you can change the settings to whatever you want and get your email anywhere as opposed to just when you sync with your PC. If I've read your situation correctly, that should do the trick.
