Clicking on 'Documents' I encounter these two folders: My Documents, Public Documents.

Answer: Any place you want it (and can place it);(does not apply to Calibre-Portable: Primary Library)

The default is where you (currently) see it (the new, empty one) for your OS.

If you like that Location, simply delete that one and Move original folder back (This assumes the Original folder has the SAME name) there.
Calibre (and content server) MUST be Not running when you do this.
