What I think you are seeing is the Book Jacket. Under Preferences - Common options - Structure detection there is an option to Insert metadata as page at start of book. It would seem that you have this option checked.

When you converted to mobi the first time the metadata was inserted into the book. Then when you converted to AZW3 it was added as a page in the book a second time. By default this option is not checked.

I do not use mobi or azw3 files. You may be able to use the tweak book function of calibre to expand the (azw3) book then use any editor (like notepad++) to remove the offending page. Then have it rebuild the book. There might be easier methods, hopefully someone versed in Kindles will chime in with a more direct method of removing the info from your books.
