In the case of mobidedrm and ConvertLIT, the program just removes the DRM (ConvertLIT can also explode the LIT file to OEB, but that is separate from the DRM and does not remove the metadata). So there is still information in the ebook that provides at least strong evidence that it was once DRMed - for example, the publisher and ISBN. In addition, there can be other more direct information such as the DRM provider (e.g. OverDrive) and, in the case of MOBI ebooks, the drm_server_id, drm_commerce_id, and drm_ebookbase_book_id.
I don't know what bread crumbs ereader2html may leave behind, since metadata often ends up embedded in HTML.
