All e-book stores grant you a licence to use the content; they don't sell you the book. What you're buying is the licence.

This is really no different to a paper book. When you buy a paper book you're buying the ink and paper; copyright law grants you limited rights to read the contents of the book, but you don't "own" those contents in any way.
