It's nothing to do with DRM.

The person who created the PDF has the option of preventing readers copying text to the clipboard. PDF readers will respect this. But it's open to anyone to write a program that extracts the text from the PDF and write to another file. Presumably, this is what the mobi conversion program is doing.

In general, it's better to purchase "real" ebooks, like Mobi or Kindle books, on the Kindle, rather than PDFs. Real ebooks have flowing pages that can resize themselves for whatever screen size you are using. PDFS tend to be designed for a fixed page size.
