You can do that with a tag type column.

Add a custom column call "Playlist". Make it a tag-type. Set the value for one of the books to the playlist name you want. "Playlist" will appear in the tag browser with the playlist name under it. Dragging a book to the playlist name will add that book. Keep doing the last two steps to add new playlists and books to the playlists.

After posting, I realised that order might be important. In that case, use a series type column. But, I don't thing you will be able to put a book into multiple playlists with a series type column.
