Of course you can edit it but not the 'usual way' as I wrote. Very cumbersome I presume using a picture editor.
Making a screen capure is not a very appropriate way to store text passages. Of course you could for example take a photo and store it with evernote. You even could write it down or paint a oil painting of that page.
But that are very cumbersome ways, too.
The main advantage using evernote in text books is clearly not the method making screenshots but highlighting text passages and store it as editable text.
Maybe evernote has an text recogintion modul (wich I do not know), that would make it a bit easier.
