Speaking as someone who bought a 3-in-1 pbook, I have to say that it looks nice on the shelf, but it is heavy to to hold while reading, so I don't think that I would choose one like this again.

When it comes to ebooks, is there any reason not to have both options?

As for all at once or just a couple of months apart, my personal choice would be all at once. I don't know the reasons why separate would be more useful for the publisher or for the author, but if you choose to go this way, I would suggest that you make if very clear that the next books are going to be available in a couple of months and even if you go for the all at one option it should be clear that it is a trilogy so the readers would know what they should expect.
